What You Need

  • ½ cup salted butter, softened
  • ½ cup granulated sugar
  • ½ cup dark brown sugar, packed
  • 1 large egg, room temperature
  • 1 tablespoon vanilla extract
  • ½ cup pumpkin puree (not pie filling—there's a huge difference)
  • 2 teaspoons pumpkin pie spice
  • ¾ teaspoon baking powder
  • 1½ cups all-purpose flour

For Decorating/Serving

  • Dark chocolate, melted
  • Whipped cream or vanilla bean ice cream

Preheat your oven to 375°F (190°C). Spray an 8-inch cake pan with non-stick spray and line it with parchment paper.

In a mixing bowl, cream the butter and sugars until light and fluffy, about 2 minutes. Throw in the egg, vanilla, pumpkin puree, and pumpkin pie spice, and mix like your life depends on it.

In another bowl, sift together the flour and baking powder. Slowly add this to the wet mixture, stirring until just combined. The batter should be very thick.
